Carbone opened in the heart of the Dallas Design District in 2022. A classic Italian restaurant for the modern era, this glamorous and exciting destination features charismatic service captains sporting burgundy tuxedos, an intimate atmosphere designed by Ken Fulk, and a menu of world-renowned interpretations of Italian-American cuisine by Chef Mario Carbone.
CHEF MARIO CARBONE
Growing up in Queens, New York, Chef Mario Carbone was steeped in two approaches to Italian cuisine: the northern elegance preserved by his maternal grandparents and the Sicilian abbondanza that defined his father’s side of the family. His future path was always clear.
After graduating from the Culinary Institute of America, Carbone spent a year in Italy that deeply connected his connection to his roots—immersing himself in the flavors, techniques, and traditions that would inspire his cooking and his identity.
Carbone’s cooking remains rooted in the Italian classics of his childhood, emphasizing top-quality ingredients and honoring the traditions of a bygone era.

THE CLASSICS
The Carbone menu features classic Italian-American dishes prepared with exceptional ingredients and fine-dining techniques, preparations like Caesar Salad alla ZZ, Carpaccio Piemontese, Baked Clams, and Veal Parmesan, Ribeye Diana, and seasonal specials created by Chef Carbone as a love letter to his adopted city.
Everything is meant to be shared, from the moment the pre-dinner bounty of fresh chunks of parmigiano cheese, a bread basket overflowing with and a selection of cured meats are placed on the table to the moment the captain asks if you have room for the famous carrot cake.
